Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons lemon juice

2 tablespoons extra virgin olive oil, plus more for drizzling

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt and pepper, to taste

1/4 cup Greek yogurt

1/2 cup cherry tomatoes, halved

1/4 cup diced cucumber

1/4 cup Kalamata olives, pitted and sliced

1/4 cup crumbled feta cheese

Fresh dill or parsley, for garnish

Pita chips or fresh pita bread, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, lemon juice, olive oil, minced garlic, ground cumin, salt, and pepper. Process until smooth, scraping down the sides as necessary.

    If the hummus is too thick, add a tablespoon of water at a time and process until you reach your desired consistency.

      Once the hummus is creamy and smooth, transfer it to a serving dish and create a small well in the center.

        Spoon the Greek yogurt into the well, spreading it gently to create a layer on top.

          Top the hummus with cherry tomatoes, diced cucumber, Kalamata olives, and crumbled feta cheese, distributing them evenly across the surface.

            Drizzle extra virgin olive oil over the entire dish and sprinkle with fresh dill or parsley for garnish.

              Serve immediately with pita chips or fresh pita bread.
