Ground Turkey and Peppers

1 lb ground turkey

2 large bell peppers (red and yellow), diced

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with green chiles

1 cup corn (fresh or frozen)

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional: shredded cheese and avocado slices for topping

Instructions
 

Prepare the Ingredients: Start by washing and dicing the bell peppers, chopping the onion, and mincing the garlic. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, cooking until fragrant and slightly translucent (around 3-4 minutes).

      Cook the Turkey: Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, cumin, chili powder, and smoked paprika.

        Add Peppers and Corn: Stir in the diced bell peppers and corn, cooking for an additional 5 minutes until the peppers are tender.

          Incorporate Tomatoes: Pour in the diced tomatoes with green chiles and allow the mixture to simmer for about 5 minutes, stirring occasionally. Adjust seasoning if necessary.
