Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 large sweet potatoes, peeled and diced

1 cup spinach, chopped

1 cup black beans, rinsed and drained

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

½ tsp salt

¼ tsp black pepper

½ cup shredded cheddar cheese (optional)

1 tbsp olive oil

½ cup chicken broth

Fresh cilantro for garnish

Instructions
 

Preheat oven to 375°F (190°C).

    Cook the sweet potatoes: In a large pot, bring water to a boil. Add the diced sweet potatoes and cook for 10-15 minutes until tender. Drain and set aside.

      Sauté the turkey: In a large skillet, heat olive oil over medium heat. Add the onions and garlic, and sauté until onions are translucent (about 3-4 minutes).

        Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

          Add the spices and greens: Stir in the smoked paprika, cumin, salt, black pepper, chopped spinach, and black beans. Mix well and cook for another 3 minutes until the spinach is wilted.

            Combine and layer: In a large casserole dish, spread a layer of cooked sweet potatoes on the bottom. Top with the turkey mixture. If desired, sprinkle with shredded cheddar cheese.

              Add broth: Pour the chicken broth evenly over the top.

                Bake: Cover with foil and bake in the preheated oven for 25 minutes. Remove foil and bake for an additional 10 minutes until everything is heated through and cheese is melted.

                  Garnish and serve: Remove from the oven, let cool for a few minutes, then garnish with fresh cilantro before serving.
