1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), diced

1 small onion, chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

1 cup spinach (optional for added greens)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 5-7 minutes or until they start to soften, stirring occasionally.

    Add Aromatics: Add the chopped onion and garlic to the skillet. Sauté for an additional 3-4 minutes until the onion becomes translucent and the garlic is fragrant.

      Cook the Turkey: Push the sweet potato mixture to the side of the skillet, add the remaining tablespoon of olive oil, and then add the ground turkey.
