Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn kernels (fresh or frozen)

1 tsp chili powder

1 tsp paprika

1/2 tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish

Optional: 1 avocado, sliced for topping

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove the sweet potatoes from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté for about 5 minutes, or until the vegetables are soft and fragrant.

      Brown the Turkey: Push the vegetables to one side of the skillet and add the ground turkey to the empty side. Cook the turkey for about 6-8 minutes until browned and cooked through, breaking it up with a wooden spoon. Season with the chili powder, paprika, cumin, salt, and pepper.

        Combine Everything: Once the turkey is cooked, stir in the corn and cooked sweet potatoes. Mix everything well and cook for an additional 2-3 minutes to heat through and allow the flavors to meld.

          Serve and Garnish: Remove the skillet from the heat. Serve hot, garnished with fresh cilantro or parsley. If desired, top with sliced avocado for an extra creamy touch.
