Ground Turkey Teriyaki Stir Fry

1 lb ground turkey

2 tbsp sesame oil

1 cup bell peppers (mixed colors), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

4 green onions, chopped

3 cloves garlic, minced

1 inch piece of ginger, grated

1/3 cup soy sauce (low sodium)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)

Cooked rice or quinoa, for serving

Sesame seeds, for garnish

Instructions
 

Prepare the sauce: In a small bowl, mix the soy sauce, honey, rice vinegar, and grated ginger. Set aside.

    Cook the turkey: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the ground turkey, breaking it apart with a spatula, and cook until browned and fully cooked (approximately 5-7 minutes).

      Add vegetables: Once the turkey is cooked, add the sliced bell peppers, broccoli florets, snap peas, and julienned carrot. Stir-fry for 4-5 minutes or until vegetables are tender-crisp.

        Combine with sauce: Pour the teriyaki sauce over the turkey and vegetables. Stir well to coat everything evenly. If you prefer a thicker sauce, add the cornstarch mixture at this point and stir for an additional 1-2 minutes until the sauce thickens.

          Finish it off: Stir in the chopped green onions and cook for another minute. Remove from heat.

            Serve: Serve the stir fry over cooked rice or quinoa, and sprinkle sesame seeds on top for an added crunch.
