Hawaiian Shoyu Chicken

2 lbs chicken thighs (bone-in, skin-on)

1/2 cup soy sauce (preferably low sodium)

1/4 cup brown sugar

1/4 cup honey

1/4 cup rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

1 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional, for heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Fresh pineapple slices (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, sesame oil, black pepper, and red pepper flakes. Whisk until the sugar is dissolved. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare for Baking: Remove the marinated chicken from the refrigerator. Place the chicken in a single layer in a large baking dish. Pour any remaining marinade over the chicken.

        Bake the Chicken: Cover the dish with aluminum foil and bake for 35 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F) and caramelized.

          Baste and Glaze: Every 10 minutes during the last 20 minutes of baking, baste the chicken with the pan juices to enhance flavor and help achieve a beautiful glaze.

            Serve: Remove the chicken from the oven and allow it to rest for about 5 minutes. Serve hot, garnished with chopped green onions and sesame seeds. Pair with fresh pineapple slices for a delightful, tropical contrast.
