Hearty Irish Chicken Dhansak Curry

500g chicken thighs, boneless and skinless, cut into bite-sized pieces

1 large onion, finely chopped

3 cloves garlic, minced

1 inch ginger, minced

1 green chili, slit lengthwise (adjust to taste)

1 cup red lentils, rinsed

1 cup coconut milk

2 cups chicken stock

2 medium potatoes, diced

1 carrot, diced

1 tablespoon tamarind paste

1 tablespoon curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon garam masala

Salt and pepper to taste

2 tablespoons vegetable oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the base: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic, ginger, and green chili, and cook for another 2 minutes until fragrant.

    Brown the chicken: Add the chicken pieces to the pot and cook until they are lightly browned on all sides, about 5-7 minutes.

      Spice it up: Sprinkle the curry powder, ground cumin, ground coriander, turmeric powder, salt, and pepper over the chicken. Stir well to coat the chicken in the spices.

        Add veggies and lentils: Add the diced potatoes, diced carrot, rinsed red lentils, and tamarind paste into the pot. Stir to combine everything.

          Pour in liquids: Pour in the chicken stock and coconut milk. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until the lentils and vegetables are tender.

            Finalize the dish: After the simmering time, taste and adjust seasoning as necessary. Stir in the garam masala and let it cook for another 5 minutes.

              Serve: Serve hot, garnished with fresh cilantro and lime wedges on the side. Enjoy this hearty Irish twist on a classic Dhansak with rice or naan!
