Hearty Lentil and Potato Soup

Ingredients
  

1 cup green or brown lentils, rinsed and drained

2 medium potatoes, diced (about 2 cups)

1 large onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add the minced garlic and sauté for another minute, until fragrant.

      Stir in the diced potatoes, rinsed lentils, diced tomatoes (with their juice), vegetable broth, dried thyme, smoked paprika, and the bay leaf. Bring the mixture to a boil.

        Once boiling, reduce the heat to low, cover, and simmer for about 30-35 minutes, or until the lentils and potatoes are tender.

          Season with salt and pepper to taste. Remove the bay leaf and discard it.

            For a creamier texture, you can partially blend the soup using an immersion blender, or transfer a portion to a blender and blend until smooth before returning it to the pot.

              Serve hot, garnished with fresh chopped parsley.
