HONEY GARLIC ASIAN CHICKEN KABOBS

Ingredients
  

1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional)

1 bell pepper, cut into 1-inch pieces (any color)

1 small red onion, cut into wedges

Skewers (wooden or metal)

Fresh cilantro, for garnish

Sesame seeds, for garnish

Instructions
 

In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using) to create the marinade.

    Place the chicken cubes in a large resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

      If using wooden skewers, soak them in water for 30 minutes to prevent burning.

        Preheat your grill or grill pan to medium-high heat.

          Thread the marinated chicken, bell pepper pieces, and red onion wedges onto the skewers, alternating between chicken and vegetables.

            Once your grill is hot, place the kabobs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Remove the kabobs from the grill and let them rest for a few minutes.

                Garnish with fresh cilantro and sprinkle with sesame seeds before serving.
