2 cups rolled oats

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup unsweetened applesauce

1/2 cup almond milk (or any milk of choice)

2 large eggs

1/4 cup pure maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

1 tablespoon chia seeds (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with a little oil or butter.

    Combine Wet Ingredients: In a large mixing bowl, whisk together the applesauce, almond milk, eggs, maple syrup, and vanilla extract.

      Mix Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking powder, and salt. If using chia seeds, add them to this mix.

        Combine Mixtures: Pour the dry ingredients into the wet ingredients and stir until well combined. Fold in the diced apples, nuts, and dried fruits if using.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.

            Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Cool and Serve: Allow to cool for a few minutes before slicing into squares. Serve warm, either plain or drizzled with additional maple syrup.
