4 large eggs

2 tablespoons mayonnaise (preferably Japanese Kewpie)

1 teaspoon Dijon mustard

1 teaspoon soy sauce

Salt and pepper, to taste

4 slices of soft white bread (shokupan preferred)

1 teaspoon sugar (optional, for sweetness)

Fresh chives or green onions, finely chopped (for garnish)

Butter (for spreading)

Boil the Eggs: Place the eggs in a pot of cold water and bring to a boil over medium heat. Once boiling, cover the pot, turn off the heat, and let the eggs sit for 10-12 minutes. Then, transfer them to a bowl of ice water to cool.

    Prepare the Filling: Once the eggs are cooled, peel them and place them in a mixing bowl. Mash the eggs with a fork until they reach a chunky consistency.

      Mix in Condiments: Add mayonnaise, Dijon mustard, soy sauce, and sugar (if using) to the mashed eggs. Season with salt and pepper to taste. Mix well until combined and creamy.

        Prep the Bread: While the egg mixture is resting, prepare the bread. Spread a thin layer of butter on one side of each slice for added flavor.

          Assemble the Sandwich: Scoop a generous portion of the egg filling onto the unbuttered side of two slices of bread. Sprinkle with chopped chives or green onions for garnish. Top with the remaining slices of bread, buttered side facing out.
