1 pound large shrimp, peeled and deveined

1/4 cup lime juice (freshly squeezed)

1/4 cup tequila

2 tablespoons olive oil

2 tablespoons agave nectar or honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 bell pepper (red or yellow), cut into 1-inch pieces

1 red onion, cut into wedges

Fresh cilantro for garnish

Lime wedges for serving

Skewers (metal or soaked wooden skewers)

Instructions
 

Marinate the Shrimp: In a large bowl, combine lime juice, tequila, olive oil, agave nectar, minced garlic, smoked paprika, cumin, salt, and black pepper. Whisk until well blended. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, up to 1 hour.

    Prepare the Grill: Preheat your grill to medium-high heat. If using wooden skewers, make sure they have soaked in water for at least 30 minutes to prevent burning.

      Assemble the Kabobs: Thread the marinated shrimp onto skewers, alternating with pieces of bell pepper and wedges of red onion. Leave a little space between each piece to ensure even cooking.

        Grill the Kabobs: Place the assembled kabobs on the hot grill. Grill for about 2-3 minutes on each side, or until the shrimp turn pink and opaque, and the vegetables are slightly charred. Be careful not to overcook the shrimp, as they can become tough.
