Ingredients

For the Meatballs:

1 pound ground beef (or a mix of beef and pork)

1/4 cup panko breadcrumbs

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon chopped cilantro (optional)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 tablespoon lemon juice

1 teaspoon soy sauce

1 teaspoon honey

Optional: Sriracha, to taste

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the meatball mixture: In a large bowl, combine the ground beef, panko breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, brown sugar, black pepper, salt, and cilantro (if using). Mix everything together until well combined, but avoid overmixing.

Form the meatballs: Using your hands or a small cookie scoop, form the mixture into meatballs, roughly 1-1.5 inches in diameter, and place them evenly spaced on the prepared baking sheet.

Bake the meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes or until they are cooked through and have a nice golden brown exterior.

Prepare the spicy mayo dip: While the meatballs are baking, in a small bowl, mix together the mayonnaise, gochujang, lemon juice, soy sauce, and honey. Adjust the spice level by adding Sriracha as desired. Taste and adjust any ingredients if necessary.

Serve: Once the meatballs are done baking, let them cool for a few minutes before serving. Plate the meatballs and serve them warm alongside the spicy mayo dip for an extra kick.
