Perfect for a summer lunch or picnic, it combines whole grain or gluten-free pasta with juicy cherry tomatoes, crunchy cucumbers, and colorful bell peppers. Tossed in a zesty lemon and basil dressing, it’s a light yet flavorful option. Add toasted pine nuts for an extra crunch. Ingredients
  

8 oz whole grain or gluten-free pasta (e.g., penne or fusilli)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1 cup fresh basil leaves, chopped

1/4 cup pine nuts, toasted (optional)

1/4 cup extra virgin olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

Salt and pepper, to taste

Instructions
 

Cook the pasta according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool.

    In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and fresh basil.

      In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until combined.

        Add the cooled pasta to the large bowl of vegetables, then pour the dressing over the top.

          Gently toss everything together until the pasta and veggies are evenly coated with the dressing.

            If using, sprinkle the toasted pine nuts on top for added crunch.

              Taste and adjust seasonings, adding more salt, pepper, or lemon juice as desired.

                Allow the salad to chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
