Lemon Garlic Shrimp Pasta With Spinach

10 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 lemon

½ cup white wine (or chicken broth)

4 cups fresh spinach, roughly chopped

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until the shrimp turns pink, then flip and cook for another 1-2 minutes. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 30 seconds, until the garlic is fragrant but not browned. Pour in the white wine (or chicken broth) and the lemon juice. Allow it to simmer for 2-3 minutes to reduce slightly.

        Combine Ingredients: Add the chopped spinach to the skillet and stir until wilted. Then, return the cooked shrimp to the skillet along with the cooked pasta. Toss everything together gently. If the mixture seems dry, slowly add reserved pasta water, a little at a time, until you reach your desired consistency.

          Finish with Cheese: Remove the skillet from heat and stir in the lemon zest and Parmesan cheese. Taste and adjust seasoning with more salt, pepper, and red pepper flakes if desired.

            Serve: Plate the pasta and shrimp and garnish with fresh parsley and additional Parmesan cheese, if desired.
