Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup all-purpose flour

2 large eggs

2 tablespoons fresh parsley, chopped (for garnish)

1/4 cup olive oil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to an even thickness, about 1/2 inch thick.

Set Up Breading Stations: In a shallow dish, mix the flour with a pinch of salt and pepper. In another dish, whisk the eggs. In a third dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper.

Bread the Chicken: Dredge each chicken breast in the flour, shaking off the excess. Then dip it into the beaten eggs, letting the excess drip off. Finally, coat the chicken in the Parmesan-panko mixture, pressing gently to help it adhere.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes on each side, until golden brown.

Bake in the Oven: Transfer the browned chicken to the prepared baking sheet and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).

Garnish and Serve: Remove the chicken from the oven, let it rest for a few minutes, then garnish with fresh chopped parsley. Serve it hot with your favorite sides!
