2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces fettuccine or your pasta of choice

1 cup spinach, fresh

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper.

    Cook the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned chicken breasts. Cook for about 5-6 minutes on each side or until fully cooked and golden brown. Remove the chicken from the skillet and set aside on a plate.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant. Then, add the halved cherry tomatoes, cooking for an additional 3-4 minutes until they start to soften.

        Make the Cream Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer for about 3-4 minutes until it thickens slightly. Stir in the grated Parmesan cheese until melted and smooth.

          Cook the Pasta: Meanwhile, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

            Combine Everything: Slice the cooked chicken and return it to the skillet with the sauce. Add the cooked pasta, fresh spinach, and a little reserved pasta water (if needed to loosen the sauce) to the skillet. Toss until everything is well coated.
