Ingredients
  

1 lb ground turkey or beef

1 cup quinoa or brown rice

2 large bell peppers (any color), diced

1 small onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 can (15 oz) black beans, rinsed and drained

1 tsp chili powder

1 tsp paprika

1 tsp cumin

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

½ cup shredded cheese (cheddar or mozzarella)

Fresh cilantro or parsley for garnish

Olive oil for cooking

Instructions
 

Cook the grains: In a medium pot, cook quinoa or brown rice according to package instructions. Set aside.

    Sauté the veggies: In a large skillet, heat 1 tbsp olive oil over medium heat. Add chopped onion and diced bell peppers, sautéing until softened (about 5 minutes). Add minced garlic and sauté for an additional minute.

      Brown the meat: Push the vegetables to one side of the skillet, add the ground turkey or beef to the other side, breaking it up with a spatula. Cook until browned and no longer pink, about 6-8 minutes.

        Combine ingredients: Stir in the diced tomatoes, black beans, corn, chili powder, paprika, cumin, salt, and pepper. Mix well to combine all ingredients. Let it simmer for 5 more minutes to heat through and blend the flavors.

          Assemble bowls: In meal prep containers, distribute an even layer of quinoa or brown rice at the bottom. Top with a generous scoop of the meat and veggie mixture.

            Add cheese: Sprinkle shredded cheese on top of each bowl and cover the containers with lids.

              Garnish and serve: Before serving, garnish with fresh cilantro or parsley. Heat in the microwave as needed, and enjoy your delicious meal prep bowls!
