1 can (20 oz) crushed pineapple in juice, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup unsalted butter, melted

1/2 cup shredded coconut (optional)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

Prepare the Crust: In a medium bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly moistened. Press the mixture into the bottom of a 9x13 inch baking dish to form an even crust.

    Make the Cream Cheese Layer: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and blend until well combined.

      Whip the Cream: In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
