12 oz uncooked pasta (fusilli or penne work well)

2 tablespoons olive oil

2 large onions, thinly sliced

3 cloves garlic, minced

4 cups low-sodium vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon sugar

1 teaspoon balsamic vinegar

Salt and pepper, to taste

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley for garnish

Sauté Onions: In a large pot, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown.

    Add Garlic & Seasonings: Stir in the minced garlic, thyme, and sugar. Cook for an additional 2-3 minutes until fragrant.

      Combine Ingredients: Pour in the vegetable or chicken broth and add the uncooked pasta, balsamic vinegar, salt, and pepper to taste. Stir well to combine.

        Cook Pasta: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.

          Add Cheese: Remove the pot from heat and stir in the Gruyère and Parmesan cheeses until melted and creamy. Adjust seasoning as needed.

            Serve & Garnish: Spoon the creamy pasta into bowls and garnish with chopped fresh parsley. Serve immediately and enjoy!
