Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

3 cloves garlic, minced

1 cup (150g) cherry tomatoes, halved

2 cups (500ml) chicken broth

1 package (16 oz / 450g) gnocchi (store-bought)

1 lemon, zested and juiced

1 teaspoon dried thyme

2 cups (60g) fresh spinach

Salt and pepper to taste

¼ cup (25g) grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Garlic and Tomatoes: In the same pot, add the minced garlic and halved cherry tomatoes. Sauté for 2-3 minutes until the garlic is fragrant and the tomatoes start to soften.

      Add Broth and Gnocchi: Pour in the chicken broth along with the lemon juice and lemon zest. Bring the mixture to a gentle simmer. Add the gnocchi and thyme, stirring well to combine.

        Simmer: Return the chicken to the pot. Cover and let it cook for about 5-7 minutes or until the gnocchi are tender and float to the surface, and the chicken is cooked through.

          Add Spinach: Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Taste and adjust seasoning with more salt and pepper if desired.

            Finish and Serve: Remove from heat and stir in the grated Parmesan cheese. Serve hot, garnished with chopped parsley if desired.
