One Skillet Salmon with Lemon Orzo

Ingredients
  

4 salmon fillets (skinless)

1 cup orzo pasta

2 tablespoons olive oil, divided

1 small onion, finely diced

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

Juice and zest of 1 lemon

1 cup cherry tomatoes, halved

2 cups baby spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crushed red pepper flakes (optional, for heat)

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, carefully place the salmon in the skillet, skin-side down (if they have skin). Sear for about 4 minutes, then flip and cook for an additional 3 minutes until cooked through and golden. Remove the salmon from the skillet and set aside.

    Prepare the Orzo: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Orzo: Add the orzo to the skillet, stirring it for about a minute to toast lightly. Pour in the chicken or vegetable broth and bring it to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid.

        Add Flavor: Once the orzo is cooked, stir in the lemon juice, lemon zest, cherry tomatoes, and baby spinach. Season with salt, pepper, and crushed red pepper flakes if using. Stir well to combine, allowing the spinach to wilt.
