2 cups sushi rice

2 ½ cups water

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 pound sushi-grade salmon, skin removed and diced

2 tablespoons soy sauce

1 teaspoon sesame oil

1 ripe avocado, sliced

¼ cup green onions, finely chopped

1 tablespoon wasabi (optional)

½ cup breadcrumbs (Panko for extra crunch)

Oil, for frying

Microgreens or sesame seeds, for garnish

Instructions
 

Cook the sushi rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water; bring to a boil. Once boiling, reduce heat to low, cover, and cook for 18 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the rice: In a small bowl, mix the rice vinegar, sugar, and salt. Microwave for 30 seconds until the sugar dissolves. Uncover the rice and fold in the vinegar mixture gently. Allow the rice to cool to room temperature.

      Prepare the salmon mixture: In a bowl, combine the diced salmon, soy sauce, sesame oil, and a touch of wasabi if desired. Mix gently to coat the salmon evenly.

        Form the rice cakes: Once the sushi rice is cool, wet your hands and take about 2 tablespoons of rice to form into compact rectangles or squares. Repeat with the remaining rice.

          Coat and fry the rice cakes: Dredge each rice cake in breadcrumbs, pressing gently to adhere. In a large skillet, heat about ½ inch of oil over medium heat. Fry the rice cakes in batches for about 2-3 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
