Savory Japanese BBQ Chicken Fried Rice Extravaganza

Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, cut into bite-sized pieces

1/4 cup Japanese BBQ sauce (such as Yakitori or Tare)

2 tablespoons vegetable oil

3 green onions, sliced (white and green parts separated)

2 cloves garlic, minced

1/2 cup frozen peas and carrots mix

2 large eggs, beaten

2 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Marinate the Chicken: In a bowl, combine the chicken pieces with Japanese BBQ sauce and let it marinate for at least 30 minutes in the fridge.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 6-8 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and the white parts of the green onions. Sauté for about 1 minute until fragrant.

        Add Veggies: Stir in the frozen peas and carrots, cooking for an additional 2-3 minutes until they're heated through.

          Fry the Rice: Push the veggies to one side of the skillet. Pour in the beaten eggs and scramble until fully cooked. Then, add the cooked rice, soy sauce, and sesame oil. Mix everything together, breaking apart any clumps of rice.

            Combine: Add the cooked chicken back into the skillet. Stir-fry for another 2-3 minutes, ensuring all ingredients are combined evenly. Season with salt and pepper to taste.

              Garnish and Serve: Remove from heat. Garnish with the green parts of the sliced green onions, sesame seeds, and fresh cilantro if desired. Serve hot and enjoy your delicious Japanese BBQ Chicken Fried Rice!
