Ingredients
  

1 pound Italian sausage (mild or spicy, sliced)

2 cups broccoli florets

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

2 cups baby potatoes, halved

4 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: In a large mixing bowl, combine the broccoli, bell peppers, red onion, and baby potatoes.

      Season: Drizzle the vegetables with 3 tablespoons of olive oil, and add minced garlic, oregano, smoked paprika, salt, and pepper. Toss well to evenly coat.

        Add Sausage: Incorporate the sliced Italian sausage into the veggie mix and combine one more time.

          Arrange on Baking Sheet: Spread the sausage and veggie mixture evenly on a large sheet pan in a single layer.

            Roast: Place the pan in the preheated oven and roast for about 25-30 minutes, or until the sausage is browned and the vegetables are tender, tossing halfway through for even cooking.
