Instructions

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, minced garlic, smoked paprika, cayenne pepper, salt, pepper, and lime juice. Toss well and let marinate for about 15 minutes.

Prepare the Mango Salsa: In a separate bowl, mix the diced mango, red bell pepper, red onion, jalapeño, lime juice, fresh cilantro, and salt. Toss gently to combine and set aside to let the flavors meld.

Make the Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, chili powder, and a pinch of salt until smooth. Adjust seasoning to taste.

Cook the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp. Cook for about 2-3 minutes per side or until they turn pink and opaque. Remove from heat.

Prepare the Avocado Base: In a bowl, gently mix the diced avocados with lime juice and a pinch of salt.

Assemble the Bowls: If using rice, place a base layer of rice in each bowl. Top with the lime-treated avocado, then add the cooked shrimp. Spoon the mango salsa over the shrimp. Drizzle with lime-chili sauce.

Garnish and Serve: Finish each bowl with extra cilantro and lime wedges on the side for additional flavor.
