Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

For the Shrimp:

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

For the Avocado:

2 ripe avocados, diced

Juice of 1 lime

Salt to taste

For Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

Juice of 1 lime

1 teaspoon chili powder

Salt to taste

For Serving:

Cooked rice or quinoa (2 cups, optional)

Fresh cilantro leaves for garnish

Instructions
 

Prepare the Shrimp:

    - In a bowl, combine olive oil, minced garlic, smoked paprika, chili powder, salt, and pepper. Add the shrimp and toss to coat evenly. Let marinate for 15-20 minutes.

      Make the Mango Salsa:

        - In a mixing bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix gently and set aside to let flavors meld.

          Prepare the Lime-Chili Sauce:

            - In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, chili powder, and salt until smooth. Adjust seasoning as desired.

              Cook the Shrimp:

                - Heat a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side or until pink and opaque. Be careful not to overcook.
