Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Avocado Layer:

2 ripe avocados, diced

1 tablespoon fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/2 cup Greek yogurt

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon honey (optional)

Salt and pepper to taste

For Assembly:

2 cups cooked brown rice or quinoa

Fresh lime wedges, for garnish

Extra cilantro, for garnish

Prepare the Shrimp: In a medium bowl, combine the shrimp with olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and pepper. Let it marinate for about 15-20 minutes.

    Make the Mango Salsa: In a separate bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Set aside to allow the flavors to meld.

      Prepare the Avocado Layer: In another bowl, gently toss the diced avocados with lime juice, cilantro, and salt. Be careful not to mash the avocados.

        Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat.
