1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 ripe avocados, diced

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

Fresh cilantro, for garnish

For the Mango Salsa:

1 ripe mango, diced

1 small red bell pepper, finely chopped

1 jalapeño, deseeded and minced

Juice of 1 lime

Salt and pepper, to taste

For the Lime-Chili Sauce:

¼ cup Greek yogurt or sour cream

Juice of 1 lime

1 teaspoon chili powder

1 teaspoon honey (optional)

Salt, to taste

Instructions
 

Prepare the Shrimp:

    - In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Ensure the shrimp are well coated.

      - Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes per side or until they are pink and opaque. Remove from heat and set aside.

        Make the Mango Salsa:

          - In a bowl, combine the diced mango, red bell pepper, jalapeño, lime juice, salt, and pepper. Stir well to mix the ingredients and let it sit for 10 minutes to allow the flavors to meld.
