1 lb (450g) flank steak, sliced thinly against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 large onion, sliced into thin rings

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons oyster sauce

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

Green onions, chopped for garnish

Sesame seeds for garnish

Instructions
 

Marinate the Steak: In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Toss well to coat and let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Vegetables: Slice the onion and bell peppers and set them aside. Mince the garlic and grate the ginger for later use.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until it's shimmering but not smoking.

        Cook the Steak: Add the marinated flank steak to the hot pan in a single layer and sear for about 2-3 minutes without stirring, allowing it to brown properly. Stir-fry the meat for an additional 1-2 minutes until it's just cooked through. Remove the steak from the pan and set it aside.

          Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the sliced onions and bell peppers and stir-fry for about 3-4 minutes until they are slightly softened and vibrant in color.
