Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/4 cup milk (or dairy-free alternative)

1/2 tsp vanilla extract

1 egg, beaten (or flax egg for vegan option)

1/4 cup chopped walnuts (optional)

Oil for frying (vegetable or coconut oil)

Powdered sugar for dusting (optional)

Instructions

Prepare the Batter: In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, salt, and cinnamon. Mix until the dry ingredients are incorporated with the bananas.

Add Wet Ingredients: Pour in the milk, vanilla extract, and beaten egg into the batter. Stir gently until just combined. If desired, fold in the chopped walnuts for added crunch.

Heat the Skillet: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle upon contact.

Fry the Fritters: Use a tablespoon to drop scoops of the batter into the hot oil, leaving space between each fritter. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Drain Excess Oil: Once cooked, carefully remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.

Serve: Dust your banana fritters with powdered sugar if desired. Serve while warm with a drizzle of maple syrup or a dollop of whipped cream.
