1.5 lbs chicken thighs (boneless, skinless)

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons paprika

1 teaspoon cumin

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon fresh lime juice

1 tablespoon brown sugar

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked rice or quinoa, for serving

Marinate the Chicken: In a large bowl, combine the chicken thighs, coconut milk, lime juice, paprika, cumin, cayenne pepper, brown sugar, salt, and pepper. Mix well to coat the chicken evenly. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic and diced red bell pepper; cook for an additional 2-3 minutes until softened.

      Cook the Chicken: Remove the marinated chicken from the refrigerator. Add the chicken along with the marinade to the skillet with vegetables. Cook on medium-high heat for about 8-10 minutes, turning occasionally, until the chicken is cooked through and golden brown.

        Thicken the Sauce: Once the chicken is cooked, reduce the heat to low and let the mixture simmer for an additional 5-10 minutes, allowing the sauce to thicken slightly. Taste and adjust seasoning as necessary.
