Spicy Jalapeno Chicken

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon fresh lime juice

3 cloves garlic, minced

2 fresh jalapeños, deseeded and finely chopped (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Marinate the Chicken: In a large bowl, combine olive oil, lime juice, minced garlic, chopped jalapeños, smoked paprika, ground cumin, cayenne pepper, salt, and pepper. Mix well. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Grill or Skillet: If using a grill, preheat it to medium-high heat. For a skillet, heat a tablespoon of olive oil in a large skillet over medium heat.

      Cook the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the thighs for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (75°C) and have nice grill marks. If cooking in a skillet, cook for about 5-7 minutes per side, or until cooked through.

        Rest and Slice: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. Then, slice the chicken thighs into strips.
