Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup grated mozzarella cheese

4 flour tortillas (8-inch)

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper, to taste

Optional: 1 teaspoon red pepper flakes for heat

Sour cream and salsa, for serving

Instructions
 

Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if using.

    Mix the Cheeses: In a mixing bowl, combine the sautéed spinach mixture with crumbled feta and half of the grated mozzarella. Mix until well combined.

      Assemble Quesadillas: Place a tortilla in a clean skillet over medium heat. On one half of the tortilla, spread a generous amount of the spinach and cheese mixture. Sprinkle some of the remaining mozzarella on top for extra cheesiness. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook the quesadilla for 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat the process with the remaining tortillas and filling.

          Serve: Remove the quesadillas from the skillet and let them cool for a minute before cutting into wedges. Serve warm with sour cream and salsa on the side.
