Ingredients

1 lb sirloin steak, thinly sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 large onion, diced

1 bell pepper, diced

2 cups frozen french fries

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/4 cup sour cream

1/4 cup salsa

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Steak: In a bowl, toss the sliced sirloin with olive oil, garlic powder, smoked paprika, salt, and pepper. Allow it to marinate for at least 30 minutes.

Cook the Fries: Preheat your oven according to the package instructions for the frozen french fries. Spread them out on a baking sheet and bake until golden and crispy, about 20-25 minutes.

Sauté the Vegetables: In a skillet over medium-high heat, add a splash of oil. Once heated, add the diced onion and bell pepper. Sauté until they are soft and translucent, about 5-7 minutes.

Cook the Steak: Push the vegetables to the side of the skillet and add the marinated steak. Cook for about 4-5 minutes for medium-rare, stirring occasionally until the steak is browned and cooked to your liking. Mix everything together in the skillet.

Combine with Cheese: Lower the heat and add the cheddar and Monterey Jack cheese to the steak and veggie mixture. Stir until the cheese melts and all ingredients are well combined.

Assemble the Burritos: On each tortilla, layer some of the cheesy steak and veggie mixture, followed by a generous handful of crispy fries. Drizzle with sour cream and salsa, then roll the tortilla tightly to enclose the filling.

Grill the Burritos: Heat the same skillet (or a grill pan) over medium heat. Place the burritos seam-side down and grill until golden brown on both sides, about 3-4 minutes per side.

Serve: Cut the burritos in half and serve warm, garnished with fresh cilantro, if desired.
