2 large red onions, thinly sliced

3 tablespoons olive oil

2 tablespoons sumac spice

1 teaspoon salt

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Optional: 1 teaspoon honey or agave syrup (for a touch of sweetness)

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions and salt. Toss well to coat the onions evenly. Let them rest for about 15 minutes; this will help draw out some moisture and soften the onions.

    After 15 minutes, add the olive oil, sumac, and lemon juice to the bowl. If you prefer a sweeter flavor, add the honey or agave syrup here.

      Toss the ingredients well to ensure the onions are fully coated in the oil and spices.

        Allow the mixture to marinate for at least 30 minutes at room temperature. If you have more time, letting it sit for a few hours or even overnight in the refrigerator will enhance the flavors further.

          Before serving, give the onions another good toss and adjust the seasoning if necessary.

            Serve as a vibrant side dish, topping for grilled meats, or as part of a mezze platter, garnished with fresh chopped parsley.
