Ingredients

2 large red onions, thinly sliced

3 tablespoons olive oil

2 tablespoons sumac

1 teaspoon sea salt

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Pomegranate seeds (optional, for garnish)

Instructions

In a large bowl, combine the thinly sliced red onions with the olive oil, sumac, sea salt, and lemon juice. Toss well to coat the onions evenly.

Let the mixture marinate for at least 30 minutes at room temperature. This will allow the flavors to meld and the onions to soften slightly.

After marinating, take the onions and place them on a baking sheet lined with parchment paper, spreading them out evenly.

Preheat your oven to 375°F (190°C). Roast the onions in the oven for about 20 minutes, until they are caramelized and tender but still slightly crunchy.

Remove from the oven and let cool for a few minutes. Transfer to a serving dish.

Garnish with chopped parsley and, if desired, sprinkle with pomegranate seeds for an extra burst of sweetness and color.

Serve warm or at room temperature as a vibrant side dish or a unique topping for grilled meats, salads, or sandwiches.
