Ingredients

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons honey

1 tablespoon brown sugar

1 tablespoon sriracha (adjust for spice tolerance)

3 cloves garlic (minced)

1 tablespoon ginger (grated)

1 tablespoon lime juice

1 tablespoon vegetable oil

1 red bell pepper (sliced)

1 green bell pepper (sliced)

1 cup fresh basil leaves (chopped)

Lime wedges (for serving)

Cooked jasmine rice (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the soy sauce, fish sauce, honey, brown sugar, sriracha, minced garlic, grated ginger, and lime juice. Add the chicken pieces, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and sauté for about 5-7 minutes until they are browned and cooked through.

Add Vegetables: Stir in the red and green bell peppers and cook for an additional 3-4 minutes until they begin to soften but still have a crunch.

Finish with Basil: Remove the skillet from heat, and fold in the chopped basil leaves until just wilted.

Serve: Serve the sweet and spicy Thai chicken over cooked jasmine rice, garnished with lime wedges.
