2 cups cooked chicken breast, chopped

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 cup red bell pepper, diced

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup cilantro, chopped

1 cup shredded cheese (cheddar or a Mexican blend)

1 lime, juiced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

Tortilla strips (for garnish)

Instructions
 

Prepare the Chicken: If you haven't already, cook the chicken breast. Season with salt, pepper, and a pinch of chili powder for extra flavor. Allow to cool slightly before chopping into bite-sized pieces.

    Mix the Dressing: In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, and a pinch of salt and pepper. Adjust seasoning to taste.

      Combine the Salad: In a large mixing bowl, combine the chopped chicken, black beans, corn, cherry tomatoes, red bell pepper, avocado, red onion, and cilantro.

        Dress the Salad: Pour the dressing over the salad mixture. Gently toss everything together until evenly coated.

          Add Cheese: Sprinkle shredded cheese over the top of the salad and give it a final gentle toss to combine.
