Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup chocolate chips (optional for extra fudginess)

For the Cookie Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper for easy removal.

    Make the Brownie Batter:

      - In a mixing bowl, combine the melted butter and granulated sugar. Whisk until smooth.

        - Add the eggs and vanilla extract, continuing to whisk until well combined.

          - Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined. If using, fold in the chocolate chips for extra fudginess.

            Prepare the Cookie Dough:

              - In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Beat in the egg and vanilla extract until smooth.

                  - In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined. Fold in the semi-sweet chocolate chips.

                    Layering:

                      - Pour the brownie batter into the prepared baking dish, spreading it evenly across the bottom.

                        - Dollop spoonfuls of the cookie dough on top of the brownie layer. Gently spread out the cookie dough to cover the brownie layer, but don’t worry if it’s not perfect; it will spread as it bakes.

                          Bake:

                            - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

                              - Allow the brookies to cool in the pan for at least 10-15 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack.

                                Serve and Enjoy:

                                  - Cut into squares and serve, or enjoy warm with a scoop of vanilla ice cream on top for an indulgent treat!
