Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (or vegetable oil)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: whipped cream, sliced bananas, strawberries, or additional chocolate syrup

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently. Be careful not to overmix; it’s okay if there are a few lumps.

Add Chocolate Chips: Gently fold in the semi-sweet chocolate chips.

Heat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

Cook the Pancakes: Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until the other side is browned, about another 1-2 minutes.

Serve Warm: Remove pancakes from the skillet and keep warm in a low oven (around 200°F or 95°C) while you cook the rest. Serve the pancakes stacked high with your choice of toppings like whipped cream, fresh fruit, or drizzled chocolate syrup.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4 (about 8 pancakes)
