Tuscan Chicken Pasta Recipe

2 boneless, skinless chicken breasts

8 oz penne pasta (or your choice of pasta)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried Italian herbs. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let them rest for at least 5 minutes before slicing into strips.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced red bell pepper and cook for 3-4 minutes until softened. Stir in the cherry tomatoes and cook for another 2 minutes.

        Add Spinach & Cream: Lower the heat, then add the spinach leaves, stirring until they wilt. Pour in the heavy cream and bring to a gentle simmer. Mix in the grated Parmesan cheese until melted and combined. Season the sauce with additional salt and pepper to taste.

          Combine Everything: Add the cooked pasta and sliced chicken into the skillet with the sauce. Toss everything together until well coated and heated through. If the sauce is too thick, add a splash of pasta cooking water to reach your desired consistency.

            Serve: Plate the Tuscan chicken pasta, garnish with fresh basil leaves, and sprinkle with additional Parmesan if desired. Enjoy warm!
