Ingredients

1 lb ground beef

1 lb ground pork

2 cups mashed potatoes (cooked and cooled)

1 cup shredded cheddar cheese

1/2 cup chopped green onions

2 cloves garlic, minced

1 large egg

1 cup breadcrumbs (preferably seasoned)

1/4 cup milk

1/4 cup barbecue sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 cup crispy bacon bits (optional)

Extra cheese for topping, as desired

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.

Mix Ingredients: In a large mixing bowl, combine the ground beef and ground pork. Add the cooled mashed potatoes, shredded cheddar cheese, chopped green onions, minced garlic, egg, breadcrumbs, milk, barbecue sauce, salt, black pepper, and smoked paprika. If you’re using bacon bits, add those too.

Combine Well: Use your hands to thoroughly combine all the ingredients until they are evenly mixed. Be careful not to overmix, as that can lead to a tough meatloaf.

Shape the Meatloaf: Transfer the mixture into the prepared loaf pan. Shape it into a loaf, smoothing the top and sides.

Top with Cheese: Sprinkle extra shredded cheese on top of the meatloaf if desired.

Bake: Place the loaf pan in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (70°C).

Rest Before Slicing: Once baked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing. This helps keep it moist and makes it easier to cut.

Serve: Slice and serve warm with your favorite sides, such as a fresh salad, roasted vegetables, or more mashed potatoes. Drizzle with additional barbecue sauce if desired.
