Zucchini and Squash Casserole Recipe - Evolving Table

Ingredients
  

2 medium zucchinis, sliced into thin rounds

2 medium yellow squash, sliced into thin rounds

1 medium onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup heavy cream

1 tsp Italian seasoning

Salt and pepper to taste

1 cup breadcrumbs (panko preferred)

2 tbsp olive oil

Fresh basil for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the sliced zucchinis and yellow squash, and cook for about 5-7 minutes, until they begin to soften. Season with salt, pepper, and Italian seasoning.

        In a large bowl, mix together the heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Stir in the cherry tomatoes.

          Combine the sautéed vegetables with the cream mixture, ensuring all the vegetables are coated evenly.

            In a greased 9x13 inch casserole dish, pour the veggie and cream mixture. Spread it evenly.

              Sprinkle the remaining mozzarella and Parmesan cheese on top, followed by an even layer of breadcrumbs to create a crunchy topping.

                Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbling.

                  Garnish with fresh basil before serving if desired.
